  • ⅓ cup reduced-fat mayonnaise
  • ¼ cup fresh cilantro, chopped
  • 1 teaspoon fresh lime juice
  • ¾ cup chicken, cooked, chopped
  • ½ cup reduced-fat Mexican-style cheese blend, shredded
  • ½ cup canned black beans, rinsed
  • ¼ cup red peppers, chopped
  • ¼ teaspoon ground cumin
  • 4 8-inch whole wheat tortillas
  • 1 egg, beaten
  • 2 tablespoons canola oil


  1. Heat oven to 400ºF.
  2. Mix mayonnaise, half of the cilantro and lime juice. Refrigerate until ready to use.
  3. Mix remaining cilantro, chicken, cheese, beans, corn, peppers and cumin.
  4. Spoon mixture down centers of tortillas. Fold in opposite sides of each tortilla, then roll up tightly, starting at bottom edge. Brush top with egg; press into egg roll to seal. Place seam side down on baking sheet. Brush all over with oil.
  5. Bake 20 minutes or until golden brown. Cut each diagonally into quarters. Serve each with 1 tsp. mayonnaise mixture.
